Spinach and Egg Muffin
Looking for a super healthy snack? Want to step away from almonds/avocados for a change and find another low carb snack offering some good nutrients? These spinach and kale egg muffins are worth giving a try, and your blood sugar and physique will thank you!
- Two eggs
- Coat your muffin pan with coconut oil
- Line the muffin spots with kale & spinach
- Next, crack one egg into muffin spot
- Bake at 375 for about 20 minutes or until egg is cooked how you like
Tip: I like adding a touch of hot sauce to my eggs, as well as an extra veggie on the side, such as mushrooms or bell peppers.
