Spinach and Egg Muffin

Looking for a super healthy snack? Want to step away from almonds/avocados for a change and find another low carb snack offering some good nutrients? These spinach and kale egg muffins are worth giving a try, and your blood sugar and physique will thank you!

Ingredients:

  1. Two eggs
  2. Spinach

Directions:

  1. Coat your muffin pan with coconut oil
  2. Line the muffin spots with kale & spinach
  3. Next, crack one egg into muffin spot
  4. Bake at 375 for about 20 minutes or until egg is cooked how you like

Tip: I like adding a touch of hot sauce to my eggs, as well as an extra veggie on the side, such as mushrooms or bell peppers.
